About the Farm

This coffee comes from the Gayo Highlands of Aceh in northern Sumatra, grown around the towns of Takengon and Atu Lintang at 1,200 meters. It is sourced through the Jagong Mill, a family operation run by Irham Junus with his son Andi and daughter Ina, whose surrounding family farms deliver carefully selected ripe cherry. The Junus family controls processing and milling all the way through export, and the coffee is wet-hulled in the traditional Sumatran style (giling basah) — the source of the deep body, low acidity, and spicy, earthy character this cup is loved for.

I grind this coffee with a Krups burr grinder at a 12 (out of 14) setting and brew it in a Chemex pour over at a 1:15 ratio (water @195°). I have to say the result is perfect! Rich, slightly smokey, sweet, heavy mouth feel. slight vanilla, caramel, molasses, and dark chocolate notes. ZERO BITTERNESS! Will be trying other beans from you as well.
