What Makes Coffee Taste the Way It Does?

There's a moment that happens at the counter in Greenport all the time. Someone tastes two of our coffees back to back — same roaster, same week, both dark — and looks up a little confused. One is all chocolate and cedar. The other is fruity, almost wine-like. How can two bags from the same small roastery, roasted the same way, land that far apart?

Most explanations pick one hero: it's the origin, it's the roast, it's the water. The truth is less tidy and much more interesting: coffee flavor isn't created at one moment. It's built, transformed, amplified, muted, and sometimes lost at every step between a plant on a hillside and the cup in your hand.

We've been roasting in small batches in Greenport since 1987, and this is the article I wish I could hand everyone who asks that question at the counter. No chemistry degree required. By the end, you'll be able to read a bag of coffee — any bag, not just ours — and know what it's telling you.


What Makes Coffee Taste the Way It Does?

Coffee flavor is the result of a chain, not a switch. The green coffee — its species, variety, and where and how it grew — provides the raw material. Processing changes that raw material before a roaster ever touches it. Roasting transforms it into the flavors you actually recognize as coffee. And brewing determines which of those flavors make it into your cup. Every stage inherits what the stage before it handed over, and every stage can add something, sharpen something, or lose something. That's why two coffees from the same roaster can taste completely different — and why the same bag can taste different at your house than it did at ours.

Keep that one idea and the rest is details: the green provides. Processing changes. Roasting transforms. Brewing delivers.


The Flavor Chain

Here's the whole journey:

Each link only gets to work with what the previous link hands it. No stage can add what an earlier stage didn't provide — a perfect brew can't invent sweetness that isn't in the bean. But any stage can lose what came before it. A careless roast, a stale month on the counter, water that's too hot: the chain is only as strong as its weakest link.

The Plant: Where Flavor Potential Begins

Almost all the world's coffee comes from two species. Robusta is the tough one — it grows at lower altitudes in hotter climates, shrugs off pests, and costs less to farm. The trade-off is in the cup: more bitter and astringent, woodier, with less sweetness and brightness. Arabica is the fussy one — harder to grow, happier at elevation — and it repays the trouble with a sweeter, smoother cup and the wide range of flavors specialty coffee is built on. That's the entire reason everything we roast is 100% Arabica, never blended with Robusta. The extra expense is real. So is the difference.

Within Arabica there's a second layer: variety. Just as apples come as Honeycrisp and Granny Smith, Arabica comes as Bourbon, Typica, Caturra, Catuai, Catimor, and hundreds more — plus the genetically diverse Ethiopian Heirloom varieties from where coffee originally came. Our Bali Blue Krishna grows as Bourbon and Typica; our Sumatra as Catimor and Timtim; our Costa Rica as Catuai and Caturra. The honest part most bags skip: variety creates tendencies and potential, not guaranteed tasting notes. Genetics sets the range of what a coffee can become. The rest of the chain decides which possibilities come true.


Where Coffee Grows

"Single origin." "High altitude." "Volcanic soil." Origin language points at something real — it's just usually oversold.

Here's what place actually does. Coffee is a fruit, and it develops differently depending on where it grows. Cooler temperatures — usually found at higher elevations — slow the cherry's ripening, giving it more time to build sugars and the acids that read as brightness in the cup. Shade moderates the heat; soil feeds all of it. Our Ethiopia grows at 1,800 meters in the Sidamo region; our Indonesians grow around 1,100 meters; on the Bali farms, the coffee ripens under shade trees — Erythrina, Albizia, even tangerine and orange.

But "higher automatically means better" is one of coffee marketing's favorite shortcuts, and the research doesn't back the shortcut. Elevation travels together with temperature, shade, soil, and — as you'll see in a minute — processing, and those can matter as much or more. A well-farmed, well-processed coffee from moderate elevation beats a carelessly handled coffee from a famous mountain every time. Altitude is like the zip code on a house listing: genuinely informative, but it doesn't tell you how the house was built.

The same goes for terroir — the idea that a place leaves an identifiable signature in the cup. It's real; soil and microclimate measurably shape how the fruit develops. But coffee passes through many more transforming hands than wine grapes do, and processing and roasting can amplify or override the signature of place. Country-level flavor rules are tendencies with plenty of exceptions, not laws.

Where a coffee grew tells you what kind of raw material entered the chain — not what happened to it next. That part starts at harvest.


Ripeness: The Variable Nobody Talks About

Easy to forget when you're holding a bag of roasted beans: coffee is a fruit. The "bean" is the seed inside a small cherry, and like any fruit, that cherry ripens.

As the fruit turns from green to deep red, it builds sugars and the aromatic building blocks that later become sweetness and complexity in the cup. Pick too early and you've locked in grassy, harsh potential no roaster can fully fix downstream. Pick at peak and the chain starts with everything it needs. That's why careful picking and sorting — passing through the same trees multiple times, pulling underripe and defective cherries before processing — are some of the most invisible work in your cup. None of it shows up on the bag. All of it shows up in the cup.


How Processing Changes Coffee Before It Ever Reaches a Roaster

Now the part of the chain almost nobody outside the industry understands — and the part that explains the two-bags mystery from the top of this article more than any other.

Once a cherry is picked, somebody has to get the seed out of the fruit and dry it so it can be stored and shipped. That's all "processing" means. But how it's done — how long the seed stays in contact with the fruit, and what happens during that contact — changes the bean before a roaster ever sees it. Same farm, same harvest day: process the cherries two different ways and you get two noticeably different coffees.

There are three methods you'll actually meet on our shelf, plus two more worth knowing.

NATURAL

Fruit: Stays on through drying

Seed dries: Inside whole cherry

These are tendencies, not guarantees. Origin, variety, drying, roasting, and brewing still matter.

Washed Coffee: The Clean Window

In washed (or wet) processing, the fruit comes off fast. The skin and pulp are removed shortly after harvest, the last of the sticky fruit layer is cleaned away, and the seed is dried on its own.

Because the fruit's influence is kept short, washed coffees commonly lean clean, bright, and transparent — you're tasting the bean and its origin with very little else in the way. Not a guarantee, but a reliable tendency: think of it as a clear window onto what the plant and the place produced.

Our medium roasts, the Guatemala and Costa Rica, are washed too, and it shows: nutty toffee and orange citrus in the Guatemala, honey and sweet apple in the Costa Rica. Clean, defined, articulate.

Natural Process Coffee: The Long Conversation

This is the one that confuses everybody, so let's take our time.

In natural (or dry) processing, nothing is removed at first. The whole cherry — skin, fruit, seed and all — goes onto drying beds or patios and dries intact over a period of weeks. Only after the fruit has fully dried is it finally removed from the seed.

Two things people assume about the word "natural," both wrong:

Natural does not mean organic. Organic is a farming certification — about how the plant was grown, what was and wasn't sprayed on it. Natural is a processing method — about what happened to the cherry after picking. They're unrelated. A natural coffee can be conventionally farmed; a washed coffee can be certified organic. (All of our coffees are USDA Certified Organic — washed and natural alike, because it's about the farming, not the processing.)

Natural does not mean unprocessed. While that cherry dries for weeks with the seed still inside, it is anything but inert. The fruit's sugars ferment. Naturally present yeasts and bacteria get to work. By the time the dried fruit is finally removed, fermentation and other biochemical changes have altered the raw material the roaster eventually receives. "Natural" describes what wasn't removed — not what didn't happen.

And here's where I have to retire coffee's favorite lazy explanation. You'll often hear that a natural-process bean "soaks up the flavor of the fruit," as if the seed marinates in blueberry juice. Tempting picture; not really how it works. The long fruit contact and fermentation change the bean's ingredients — its sugars, acids, and flavor precursors. Those aren't finished flavors. They're raw material. It's roasting, later in the chain, that transforms them into the fruity, sweet, wine-like character you taste. The fruit doesn't hand the bean a finished flavor. It hands the roaster a different starting point — and the roast does the rest.

That's why naturals, done well, tend toward fruit-driven sweetness, heavier body, and sometimes a wine-like depth that washed coffees rarely show. On our shelf, that's Earthy & Seductive — a blend of exclusively naturally processed coffees, and our clearest demonstration of what this method does: dark berry sweetness, smooth chocolate depth, exotic aromatics. Taste it next to the washed Ethiopia and you're tasting the processing difference more than anything else.

One piece of honesty the method deserves: natural processing is harder to do well. All that fermentation is a powerful tool, and powerful tools cut both ways. Let it run too far, dry the fruit unevenly, skip the monitoring, and you get vinegary defects instead of fruit. A great natural is the product of careful, attentive work at the farm level — which is exactly why naturals vary more from lot to lot than washed coffees do, and why sourcing them well matters.

Wet-Hulled Coffee: Indonesia's Third Way

Most articles stop at washed versus natural. But if you've ever wondered why Sumatran coffee tastes like that — deep, earthy, heavy, nothing like an Ethiopian — the answer is a third method most consumer guides never mention.

Wet-hullingGiling Basah, the traditional Indonesian approach — removes the bean's protective parchment layer while the bean is still wet and soft, then finishes drying the bare, exposed bean in the open air. No other common method exposes the naked bean to the elements at that stage. That exposure leaves a signature: wet-hulled coffees are known for heavy, syrupy body, low perceived acidity, and deep earthy, spiced tones — the classic Indonesian profile.

Both of our Indonesians are wet-hulled: Sumatra Mandheling, grown near the Burni Telong volcano — earthy and chocolate-forward, with cedar, caramel, and subtle spice — and Bali Blue Krishna, the more polished of the two: deep chocolate, vanilla sweetness, molasses richness, a hint of almond. Processing isn't the only author of those cups — the plant, the place, and our roast all contribute — but that unmistakable Indonesian depth is, to a real degree, the method talking.

Honey Process, Briefly

There's also a middle path called honey processing: the skin comes off, but some of the sticky fruit layer (the mucilage — the "honey" is a texture, not an ingredient) is deliberately left on the bean while it dries. The result usually lands between washed and natural — more sweetness and body than a washed coffee, more clarity than a full natural. We don't currently roast a honey-processed coffee, but now you can read the word on any bag that does.

And beyond all of these, some producers now engineer fermentation deliberately — sealed tanks, selected yeasts, wine-inspired techniques — a fascinating frontier, and a different article.

The takeaway from this whole chapter: by the time green coffee reaches a roaster, processing has already made some of the biggest flavor decisions in the entire chain. Washed, natural, and wet-hulled aren't trivia printed on a bag. They're three genuinely different starting materials.


Roasting: Where Flavor Becomes Coffee

Here's something that surprises people: green coffee doesn't smell like coffee. Unroasted beans smell grassy, vegetal — closer to hay than to anything you'd want in a mug. Every aroma you associate with coffee — chocolate, caramel, toast, fruit, flowers — comes into existence in the roaster.

Roasting is transformation, not just cooking. As heat builds, several overlapping changes run through the bean:

  • The Maillard reaction — the same browning chemistry behind bread crust and seared steak — helps build coffee's color, its toasty, nutty depth, and much of the roasted character you recognize.
  • Caramelization breaks the bean's sugars down toward caramel, contributing the toasted-sugar sweetness and chocolate notes.
  • The sharp acids soften. The longer and darker the roast, the more the bright, tangy acids break down — a big part of why dark roasts taste smoother and gentler than light roasts.
  • Body builds. The bean expands, its structure opens, and at the start of the second crack — an audible milestone in the roast — its natural oils begin migrating to the surface, contributing to a dark roast's heavy, mouth-coating feel (and to the sheen: shiny dark roast beans are chemistry, not age).

These reactions overlap and feed each other — no single reaction owns a single flavor — but together they're the difference between a grassy green seed and a cup of coffee.

So what does roast level actually decide? Think of it as the balance between two voices in the cup: the origin and the roast. In a light roast, the origin does most of the talking — delicate florals, bright fruit, lively acids. As the roast goes darker, roast character increasingly shares the stage: sweetness turns toasted, acids fall away, chocolate and depth come forward.

Which brings up a myth worth correcting: that dark roasting "destroys" a coffee's origin character — that once you roast dark, every bean tastes the same. The real picture is more precise. Dark roasting compresses the differences between coffees; it doesn't erase them. The delicate top notes do fade as the roast deepens — that's true, and any honest roaster will tell you so. But what the green coffee brought to the roaster still shapes the cup underneath.

We don't have to argue that philosophically. We can pour it. Our Ethiopia Washed Sidamo Guji is roasted dark — and it still carries black tea, dark chocolate, blackberry, lemongrass, and a pleasant floral finish. A dark roast with blackberry and florals in it. One more thing roasting decides: two roasters can take the exact same green coffee and produce genuinely different cups. Roast level isn't a three-position switch labeled light, medium, dark. It's a series of choices about heat, time, and development, and each choice shifts the balance of sweetness, acidity, and body. Roasting doesn't reveal a coffee's one true flavor. It constructs an expression of it.

Ours is built on a specific philosophy: small batches throughout the week, dark roasts pulled right at the beginning of second crack — far enough for the full smooth, low-acid profile, never so far that you taste the roaster instead of the coffee. No lab meters; our roasting is guided by sensory skill built over years of repetition and cupping, and the beans are air-cooled naturally, never quenched. The goal, every batch: bittersweet chocolate, toasted sugar, heavy body — bold, never bitter for bitterness's sake.

Freshness: The Clock Starts at the Roaster

The moment a batch leaves the roaster, a clock starts.

Roasting builds up carbon dioxide inside the bean, and for the first days after roasting that gas is still working its way out. This is why coffee actually needs a short rest — brew a bag the same day it was roasted and the escaping CO₂ can fight the water, making the cup taste raw and uneven. Too fresh is a real thing.

Then the curve bends the other way. As the CO₂ departs, oxygen moves in, and oxygen slowly dulls the aromas and breaks down the oils that carry body. Nothing dangerous happens — the coffee just fades, gradually becoming less of itself. Grinding accelerates all of it, which is why whole bean, ground just before brewing, always wins.

This is the entire logic of how we run the roastery: small batches through the week, constant rotation, and coffee that's typically 1–3 days off roast when it's sold or shipped — so the peak window opens on your counter, not in a warehouse. Grinding, Water & Brewing: The Last Mile

Everything up to this point determined what flavor exists in the bean. The last stage — your kitchen — determines how much of it reaches the cup. Brewing is extraction: hot water dissolving flavor out of ground coffee. Four dials control it.

Grind size sets the surface area. Finer grinds give water more to grab, so they extract faster; coarser grinds extract slower. That's why grind has to match method — coarse for a four-minute French press steep, fine for a 25-second espresso shot. (The full map is in our grind size guide.)

Water temperature sets how aggressively you extract. Hotter water pulls more out of the coffee, faster — and a dark roast, being more porous and soluble, doesn't need the help. Brew a dark roast with boiling water and you can extract more bitterness and harsh roast character than you want. That's why we brew our dark roasts at 197–200°F, just below the boil: roasting created the compounds, and brewing decides which of them — and how much — end up in your cup.

Contact time and pressure define the method itself: a long immersion pulls different things from the same grounds than a fast pressurized shot. And even the water itself matters more than people expect — water that's too stripped-down brews flat, and very hard water can mute a coffee, no matter how well everything upstream went.

Put it together and you get the point of this section: the same coffee genuinely tastes different as espresso, French press, pour-over, or drip. French press keeps the oils in the cup and brews heavy and velvety; a paper filter strips those oils for a cleaner, lighter cup; cold water extracts differently altogether, trading brightness for smoothness. None of these is the "correct" version of the coffee — they're different deliveries of the same raw material, and this last decision is yours. Get it wrong — sour and thin usually means under-extracted, bitter and ashy usually means over-extracted — and small moves fix it: adjust the grind, the temperature, or the time. What Are You Actually Tasting?

The chain ends at a link nobody prints on the bag: you. A few pieces of coffee language, decoded.

Tasting notes. When a bag says blackberry, jasmine, caramel, or chocolate, nothing was added to the coffee. Those words describe aromas the coffee genuinely produces on its own — coffee develops hundreds of aromatic compounds through growing, processing, and roasting, and many are close chemical relatives of the compounds that make actual berries and flowers smell the way they do. Professional tasters even calibrate these descriptions against standardized references (the World Coffee Research Sensory Lexicon, if you're curious how deep it goes). We add no flavors and no preservatives to anything we roast. A tasting note is a description, never an ingredient.

Aroma is most of it. Your tongue only detects a handful of basic tastes. Nearly all the complexity you experience in coffee — the fruit, the chocolate, the florals — is actually aroma, sensed through the back of your nose while you sip and swallow. Scientists call it retronasal aroma. It's why coffee smells almost as good as it tastes: to a large degree, the smell is the taste.

Acidity isn't sour. In coffee language, acidity means brightness — the lively, sparkling quality that keeps a cup from tasting flat. Our medium roasts show it well: the orange citrus in the Guatemala, the sweet apple in the Costa Rica. That's acidity working for you. Harsh, unpleasant sourness is a separate thing — often a brewing problem like under-extraction — and shouldn't be confused with the brightness good coffee is prized for.

Body isn't strength. Body is how a coffee feels — the tactile weight and texture in your mouth, from watery-light to syrupy-heavy. It comes from oils and dissolved solids, not caffeine, and it's why a wet-hulled Sumatra feels like velvet where a delicate washed coffee feels like silk.

And your palate is yours. Two people can drink the identical cup and honestly perceive different things — sensitivity to bitterness varies from person to person, and aroma perception leans on each person's own memory bank of smells. If you taste molasses where a friend tastes dark chocolate, nobody's wrong. The chain ends in a human being, and humans differ.


So Which Part Matters Most?

Fair question, and I won't cop out with "everything matters equally."

Here's the honest answer — a working hierarchy, not a law of physics. Genetics and place set the ceiling: they decide what a coffee could ever become, and no later stage can raise that ceiling. Processing can dramatically reshape the raw material: washed versus natural versus wet-hulled is often the single most recognizable divide between two cups. Roasting determines the expression: it's where potential becomes actual flavor. Freshness, grinding, and brewing determine delivery: they can't add character that isn't there, but they decide how much of it you receive.

These stages interact too much for any universal ranking — which is exactly why the most useful rule is the simplest one: the weakest link wins. A brilliant green coffee can be lost to a careless roast. A masterful roast can be lost to a stale month on a shelf. A perfectly fresh bag can be lost to boiling water and the wrong grind. Great coffee isn't one thing done heroically. It's a chain with no weak links.


One Cup That Proves the Whole Point

It's built from Ethiopian coffee processed both ways — washed and natural — plus wet-hulled Sumatra. Does dark roasting destroy a coffee's origin flavor?

It compresses origin character rather than destroying it. Delicate top notes do fade as a roast deepens, and roast-derived flavors come forward — but what the green coffee brought still shapes the cup. Aldo's dark-roasted Ethiopia still carries black tea, blackberry, and a floral finish, which a dark roast supposedly "destroys."

What does acidity mean in coffee?

In coffee language, acidity means brightness — a lively, pleasant quality that keeps a cup from tasting flat, like the citrus note in a good medium roast. It's not the same thing as tasting sour: harsh, unpleasant sourness is a separate problem, often caused by under-extraction or underripe fruit.

Why does the same coffee taste different at home than at the café?
