Our almond biscotti, rebuilt without the wheat. We swap in Sir Galahad Artisan Brown Rice Flour, add xanthan gum for structure, and keep the rest exactly as we've always done it: almonds, sugar, egg whites, butter, aluminum-free baking powder — twice-baked until the crunch holds up to hot coffee.

An honest note before you buy: we are not a dedicated gluten-free facility. These are baked in the same kitchen as our wheat biscotti. So we don't call them certified gluten-free, and we can't promise they're safe for celiac disease or a serious wheat allergy. If avoiding gluten is a preference rather than a medical necessity, you're in the right place.

One more thing worth knowing: made without gluten doesn't mean made without everything. There's real butter and egg white in here — this is not a dairy-free or egg-free cookie.

the biscotti are rather tasty, although i was disappointed that there were no whole almonds in them. i haven't had them for a while, but i seem to recall that there were actual almonds in them...
